So yesterday was apparently world pancake day... I missed the memo. But If you want to know my favorite pancake recipe check out my Puffy Pancake recipe, that one is always a huge hit in my house.
I went shopping yesterday to Costco, like I do every two weeks, and I picked up a really nice pack of roast beef and also some broccolini. I originally was going to make just regular beef and broccoli but I saw the broccolini and had to buy it, they were so green and pretty. Broccolini is similar to broccoli but it has longer thinner stalks and has smaller florets. It is often found in restaurants because honestly it is prettier looking on a plate then plain broccoli.
I will have to admit I used a packaged seasoning for the beef and broccolini, but sometimes I feel that is okay. It tasted great and was a meal I could make in under 30 minutes! Which yesterday I needed that seeing as I broke two of my toes! Yup I am a well known klutz in my family, yesterday I just wasn't paying attention and caught my last two toes on my right foot on a old cedar chest we have. They have turned a lovely shade of purple and black today... not to mention the beautiful hue of blue going up my foot. How many of you have broken anything? Me this is break number 5 on my body. See klutz!

Beef and Broccolini:
1- 2 to 3 pound beef roast (I used an sirloin tip)
1 bag of broccolini
1 package of Club House Beef and Broccoli seasoning mix
2 cloves of garlic minced
2 tablespoons of white sesame seeds
1 tablespoon of black sesame seeds
2 tablespoon of oil
1 teaspoon of butter
1 cup of water
1 batch of cooked quinoa
salt and pepper
Start cooking your quinoa accordingly to the directions on the package.
Cut your beef up into thin strips, about 1 inch wide and about 1/4 inch thick.
In a large bowl add the beef strips and then season with some salt, pepper and garlic. Mix it all up to make sure the seasoning gets every piece.
In a large skillet or a wok, heat up the oil till it is searing hot. Add beef strips and cook until they are no longer pink. Add water and beef and broccoli seasoning. Stir all together and allow to bubble and get thicker. Turn the heat down to a low heat.
Wash and trim the broccolini, by cutting the ends off and removing some of the leaves.
In a separate frying pan heat up another tablespoon of oil. Add broccolini and saute for 2 minutes or until the broccolini turns a bright green.
Add the broccolini to the beef mixture and cook for 5 minutes or until the broccolini is slightly tender.
In a small frying pan add butter and white sesame seeds. Cook them on a medium heat and toast the seeds till they are slightly golden brown. Remove from the heat.
Toss the seeds in the beef and broccolini and then serve on top of the quinoa.
