We just finished eating these and let me tell you, they were AMAZING! I love hot wings, I didn't always, but I do now. These tasted just like those amazing spicy crispy deep fried wings you could get from any pub or pizza place. What is the most amazing part of these is they are baked, so they don't clog the heart up like those yummy little wings.
Story time! Don't you love it when I share with you!
Before I had kids I was a bit of a wimp when it came to spicy food. I didn't mind spicy food, I just couldn't handle it all that well. Then I became pregnant with my daughter and that all changed. I was pretty nauseous with her and had a seriously hard time eating anything. I lived off of peanut butter, slim fast and fruit for awhile. Then my body got some strange cravings, strange to me, I wanted HOT wings, like the hotter the better. They had to specifically be from a pizza place here in Alberta called Pizza 73. We would often go hang out at a friends house and play video games till late on Friday nights, and would order pizza. I remember one night being able to out eat one of the guys barely sweating from the hot wings.
Now I can handle the spice and often choose things that are made with buffalo sauce and Sriracha. This is another simple recipe that does not lack in a punch of flavour in your mouth.
10 chicken drumsticks
1 1/2 tablespoons of baking powder
1 teaspoon of salt
1 teaspoon of cracked pepper
1/2 cup of Franks Red Hot Sauce
1 1/2 tablespoons of salted butter
Preheat oven to 250F, line a large baking sheet with aluminum foil and place a large cooling rack on top.
In a large Ziploc bag place the drumsticks, sprinkle the baking powder and salt and pepper inside. Close the bag and shake the chicken so that it gets completely coated with the baking powder and spices.
Place the drumsticks on the cooling rack that is placed on the prepared baking sheet. Place in the oven and bake for 30 minutes. Without removing the chicken turn the heat up to 450F, and bake for an additional 40 minutes until the chicken is golden brown and has a crispy skin.
In a glass measuring cup, place the butter and hot sauce. Microwave for 1 minute until the butter is melted and sauce is hot.
In a large bowl toss the drumsticks and hot sauce together. Place the chicken back on the cooling rack and then brush some of the sauce on to the wings. Place back in the oven for 5 minutes.
Serve with ranch or blue cheese dressing and enjoy.
Seriously... dang these were soooooooo good! Like I said earlier I love that they taste just like their deep fried buddies, but aren't and are way better for you.
