Hello everyone! It’s Samantha again. I honestly haven’t spent that much time in the kitchen this month, due to laziness, busyness, exhaustion and serious distraction (because I bought the new Nintendo Switch and have been spending way too much time playing Zelda!) But, I am still committed to this.
I was actually torn between a few different things that I wanted to make a post about; most of them being savoury. But, I figured, since my last two posts were more of a meal, that I would do a dessert!
My mom made these cookies a few years back. I am not sure where she found them, but they were a gold mine! She used shortening originally, but I always make it with butter because what isn’t better with butter?
White Chocolate and Skor Bit Cookies
(Makes 4 dozen)
1 1/3 cup butter, softened
1 cup brown sugar
2/3 cup white sugar
1 ½ tsps. vanilla
2 ¾ cups flour
1 tsp baking soda
½ tsp salt
3 Tbsp. milk
1 cup Skor bits
1 cup white chocolate chips
Preheat oven to 350 F.
In a large bowl, cream together butter and both sugars.
Beat in eggs and vanilla until well combined.
In a separate bowl, mix dry ingredients together.
Blend into creamed mixture, alternating with the milk (1/3 of the dry ingredients; mix. 1 Tbsp. of milk, mix. Repeat.)
Stir in chocolate chips and Skor bits, making sure they are well mixed in there.
Drop by tablespoons, or use a cookie scoop, onto ungreased cookie sheet. Bake for 10 – 12 minutes.
Let cool on a cooling rack.
Enjoy! Try not to eat so many!
I’m not the biggest white chocolate fan, but I really enjoy these. Like, I am pretty sure I ate half of the first batch my mom ever made. I also have a bad habit of eating a lot of the cookie dough. I mean, that’s part of the process, right? You can’t just NOT eat the dough.
If you don’t think that all 4 dozen of these cookies will get eaten before they go stale, they can be frozen for up to 2 months.
