We eat some form of soft taco once a month, sometimes it's chicken and sometimes it's pork. I don't overly like doing beef because if I am going to cook beef it will be in a different form then shredding for tacos. Soft tacos or even taco salad is so versatile and can change every time you have it, plus it is awesome because you can cater it to your own tastes. I like cilantro and avocados, my husband does not, so I can cut up what I want and he doesn't have to have it but the kids can eat it if they want.
This is such a kid friendly meal as well, they love being able to choose what they want on their tacos. You can change out what cheeses you use too, or if you can't eat cheese then leave it off. It is also a great way to eat a whole bunch of veggies in a sitting.
What I love too is the meat you can just put in a crock pot and walk away. All the other sides are minimal prep as well.
1 - 8 Pound Pork Butt with Bone in or a Pork Shoulder Roast
For the Rub:
1 Tablespoon Sea Salt
1 Tablespoon Garlic Powder
1 Tablespoon Onion Powder
1 Tablespoon Onion Flakes
1 Tablespoon Chili Powder
1 Teaspoon Black Pepper
1 Teaspoon Cumin
1/2 Teaspoon Ground Cloves
1/4 Teaspoon Cayenne Pepper
In a mason jar or a small jar with a lid, add all the rub ingredients and shake well till it is mixed well.
Take the pork out of the packaging and place on the bottom of the crock pot dish. Rub the meat generously with the rub till it is all coated.
Cook on low for 8-10 hours or on high for 6 hours. You want to cook it to the point where it just falls apart and shreds.
During the last half hour of cooking, make the rice so it has time to properly cook.
Cut up all the toppings you want and place in dishes on the table.
Wrap up the tortilla shells in tinfoil and then warm them up in the oven for about 10 minutes at 350F.
After the tortillas are warmed, shred the meat and then have fun trying to fit everything into your tortilla shell (I know I never get it all in and I am quite a mess afterwards)
*Note: I didn't use a pork shoulder or butt for this one I used a loin roast, it is leaner and didn't shred as nicely but that is what I had so I might as well use it. It still tasted great just wasn't as easily shredded.
Also to make it more 21 day fix friendly replace sour cream with Greek Yogurt and white rice with brown.
