You know how sometimes you don't really want the same thing for lunch, or you are craving a bit of crunch without being unhealthy. Well I was in that mood the last few days and I realized I hadn't made granola in awhile.
Home made granola is one of my favorite treats! It can be changed in so many ways and cater it to your tastes, if you want more of something then throw it in! It's just fun to experiment with different flavors, but the basic concept is pick an oil, sweetener, base grain and then add other goodies to it.
This one is my basic base but I did add a few extra things to it this time.
Ingredients: 4 Cups of Rolled Oats 1 Tablespoon of Cinnamon 1 Cup of seeds and nuts (I used a combination of pumpkin seeds, sunflower seeds, and pecans) 1/2 Dried fruit (I used cranberries) 1 Cup of Shredded Coconut A pinch of Salt 1/4 Cup of Melted Coconut Oil (You could use butter or canola) 1/4 Cup Melted Honey (You could use maple syrup or agave) 1 Tablespoon of Vanilla Extract Directions: Preheat oven to 350F, line a cookie sheet with parchment paper and set aside. In a large bowl combine all dry ingredients, make sure it is well combined. In a small bowl combine wet ingredients, pour over mixed dry ingredients and combine until it is all evenly wet. Spread out on the cookie sheet and place in the oven, bake for 20-30 minutes. Make sure to stir every 5 minutes so you don't get burnt spots or so it doesn't unevenly cook. Once it is golden in colour remove and allow to cool. It may look wet when first taken out but once cooled it will be crunchier. Serve with yogurt and fresh berries or just in a bowl with some milk and you are good to go!
