Baked Parmesan Garlic Fries

Last night I went out with my best friend to celebrate her birthday a week early, I won't be in town for her actual birthday so we had to make a date of it. We had an awesome night and went and saw the new Pirates of the Caribbean movie, which if you haven't seen it, you should because the ending is what we all have been waiting for! After the movie we went to Earls and got an appie and dessert. They have these simple shoe string fries with a garlic Parmesan dip. It was pretty good,  but man Earls where is your salt? There was also none on the table... seasoning is so important!

So today I decided to copy cat it, with salt, and the great part was I was able to use up some things that would be thrown out before we leave anyways. I have said in the past how I love having fresh herbs in my fridge, they make all the difference in the world and allow for this pop of fresh colour and flavouring. It is a must have in your fridge trust me.

This is a great simple recipe, that pairs perfect with a bbq steak or even some chicken. You could make them with your own homemade French fries and you could even deep fry them, but I wanted to use things in my freezer and make them slightly healthier. Plus I have no potatoes, remember how I said we are leaving, yeah I like to make sure nothing perishable is left behind so for weeks before hand we just eat as much as we can from the fridge and pantry.

Baked Parmesan Garlic Fries

Ingredients:


6 cups of McCain's straight cut French fries
1 cup of fresh parsley, diced up
4 to 6 cloves of garlic, minced
2 teaspoons of pink Himalayan sea salt
1 cup of finely shredded Parmesan Reggiano cheese

Directions:

Preheat oven to 450F. Line a baking sheet with parchment paper.

Place French fries on the prepared baking sheet, if you have to use 2 baking sheets, you want the French fries to not be crowded. Spread them into a single layer.

Bake in the oven until golden in colour, and are crispy on the outside but soft in the center.

In a large stainless steel bowl, toss the hot French fries with all the toppings. 

Eat right away, if you would like serve with a Parmesan garlic dip. I have a great one in the Health and Happiness Cookbook that I pair with the Calamari.

I have to tell you it was so hard to not put all the pictures up. It tasted so good, the lighting was perfect and it made for some magic to happen! I love it when a plan comes together... name that movie!

I will have to say, if you don't want to kill a vampire with your breath, add less garlic. I like mine potent, garlic is one of my favourite vegetable to spice up my food.

I shared this on our FB page and got a lot of likes and feedback! We all love a good fries recipe and this is simple and so tasty with the garlic, herbs and parmigiano. Going to make it with the new potatoes from our farmers market!
