Cheesy Baked Chicken Fingers

Nights like tonight I really have nooooo motivation to make dinner. When my hubby isn't home I often find it is a fend for yourself and eat whatever you want kind of night. But tonight I actually felt motivated to make them a real meal.

When I went grocery shopping at Costco a few weeks back, I needed to get chicken for some meal plans I had. As I was looking at the fresh ones I normally buy I realized the frozen ones in the big bags were on sale. So I decided this time around I would go for those, while I was looking at which ones to buy I found the 4 pound bag of just the tenders! They are perfect for the meals I had planned and all the cutting was done for me already. 

Tonight I decided we would have some chicken fingers and homemade French fries, all baked. The kids loved it and gobbled it all up!

Cheesy Baked Chicken Fingers

Ingredients:


10 to 15 frozen or fresh chicken tenders (the small flap on the back of chicken breasts)
1 sleeve of Premium Plus salted tops crackers
1 cup of finely grated Jack cheddar cheese
2 tablespoons of mayonnaise
1 large egg
1 tablespoon of flour
1/2 teaspoon of pepper
1 tablespoon of Worcestershire sauce  
pinch of salt

Directions:

Preheat the oven to 400F. Line a baking sheet with parchment paper. 

Make sure your chicken is defrosted. In a food processor, empty the bag of crackers and process until the crackers are a mostly a fine crumb. Empty into a rectangle pan and add the grated cheese, mix together.

In a bowl mix the rest of the ingredients and whisk together.

Dip the chicken pieces into the wet ingredients, then coat with the cracker/cheese coating. Place onto baking sheet, repeat with all the pieces.

Cook for 10 minutes on one side, flip and cook for an additional 10 minutes or until golden brown and cooked through. 

Serve with veggies, fries and a sauce.

Cheesy Baked Chicken Fingers

I loved how these turned out crunchy on the outside without being deep fried, I also loved how the cheese gives it such a great crunch. You don't need much added salt seeing as the crackers have plenty. 

A great sauce to have with it and that I love is a Sriracha and Franks hot sauce dip. Just mix the following ingredients together in a bowl and enjoy!

1/2 cup of mayonnaise 
1/2 cup of sour cream
1/4 cup of Sriracha sauce
​1/4 cup of Franks Red Hot Sauce
