You know what friends? I think having pizza night at home is one of the best things ever! Honestly no pizza place will deliver to us, but homemade pizza tastes amazing and can even be better then the pizza joints! One of my favourite flavour combos has got to be chicken, bacon and ranch. I think it is because I don't have to dip my pizza in a ranch sauce (which I always do with other kinds) because it already has loads of ranch on it. This pizza just hits my tummy in all the right places, it satisfies those cravings for take out, without all the guilt of takeout. If you have a pizza crust you love then go on ahead and use that one. Chicken Bacon Ranch Pizza Ingredients: 1 recipe for pizza crust, enough to make 2 pizzas 2 chicken breasts, cut into thin strips 6 cups of shredded mozzarella cheese 1 large beefsteak tomato, diced up 1 1/2 cups of real crumbled bacon (I use Kirkland brand) 1 small red onion, cut into thin strips 1/2 block of softened cream cheese 1 cup of creamy ranch dressing 1/8 cup of diced fresh parsley 3 tablespoons of Olive oil Directions: Make your pizza dough according to the directions. Preheat oven to 450F. Heat 1 tablespoon of olive oil in a large deep frying pan. Season the sliced chicken with salt and pepper and add to the heated pan. Cook the chicken until no longer pink and slightly browned. Place off to the side. In a medium sized bowl mix together the softened cream cheese and ranch dressing with a whisk. Whisk it until it is all incorporated and creamy. With the left over olive oil, oil your two pizza pans and then place the dough on top. Prick the dough with a fork all over, then lightly oil the top of the dough. Bake in the oven for 5 minutes and then remove the crust. Place the ranch sauce on top of the crust, then place the chicken, bacon, tomatoes, red onions and finally the cheese. Bake for an additional 10 minutes, or until the crust is golden brown and there are brown spots on the cheese. I like my cheese to be really cooked in some spots. Remove from the oven and allow to cool for 5 minutes before slicing and eating. Sprinkle on the fresh parsley and then enjoy. How many of you love dipping your pizza into a sauce?
