Lately I am all about the quick and easy meals. We have been so busy lately that anything that takes up too much time has been brushed to the side. Unfortunately that meant elaborate time consuming meals. I know most people when that happens have a tendency to eat out, well for us that just isn't an option. We don't like spending money on eating out, save it for special treats and occasions, but we also don't live close to anything. So it is actually more inconvenient to go grab take out then to make a quick meal at home.
The school year is almost over for my daughter, Kindergarten is just wrapping up and then onto grade 1! It is hard to believe how quickly the year went. I will have to say though I am looking forward to her being in school full time in the fall, just because these half day kindergarten really is annoying with driving. In the fall my son is also going to be going to preschool three days a week for half day. Which is exciting for me because I will be able to have some more time to put into the blog.
This salad was so good, my husband loved it and the kids thought it was so good as well. I mean you can't go wrong with chicken, bacon, and cheese. It is perfect for the summer as well because you can barbecue the chicken. If you make this during the not so warm months, then you can easily cook the chicken in a frying pan on the stove.
I used a great marinade from Club House called Brown Sugar Bourbon. It just added such a great falvour to the chicken and elevated the salad so it wasn't just a boring salad. I highly recommend this product and wished the bag was bigger so I could have used it for more stuff!
Chicken BLT Salad
10 chicken tender pieces
1 package of Club House's Brown Sugar Bourbon sauce
1 package of bacon
6 medium tomatoes cut into small wedges
8 cups of chopped Romaine lettuce
1 cup of finely shredded Jack cheddar cheese
Homemade 1000 Island Dressing (recipe as follows)
Marinate your defrosted chicken tender pieces in the brown sugar bourbon sauce in the fridge for 2 hours before cooking.
Cook your bacon according to the package and to the doneness you like. Cut into 1 inch pieces.
Make your 1000 Island dressing and place in the fridge for 2 hours as well. This gives it time to sit and the flavours to increase.
Either on the barbecue or in a pan on the stove, cook your chicken tender pieces until it reaches an internal temperature of 165F. Once cooked set aside.
In a large bowl add your lettuce, tomato wedges, bacon, sprinkle the cheese and then add the chicken on top. Drizzle with the amount for dressing you want and enjoy!
Homemade 1000 Island Dressing
1/2 cup of mayonnaise
1/2 cup of sour cream
1/4 cup of chili sauce (I use Heinz)
3 tablespoons of sweet pickle relish
1 tablespoon of white vinegar
a pinch of salt and pepper
Mix all together with a whisk in a bowl. Cover and place in the fridge for 2 hours.
I have made homemade 1000 Island Dressing before but this one is the bomb! Replacing the ketchup with the chili sauce just gives it a much nicer flavour. This is a dressing I will be making over and over again. It also would be a really great dip for veggies.
