How many of you are super busy? Probably a good handful of you. I know my little family can often be on the go quite a bit during the week, Wednesday's are often our busiest day, my husband sometimes can't even make it home between work and his church meetings at night. When we can have a healthy quick meal it makes all the difference in the world. I think I have mentioned a few times how my husband and I are not the biggest casserole fans. I know a lot of families who love casseroles or crock pot meals because they can be quick and made up ahead. Well this meal, elements can be done ahead of time and then thrown together last minute, and it can even be packed up and eaten on the go. I am always trying to find ways to sneak more veggies into my kids diets as well, so when you can buy things like Dempster's Garden Vegetable tortillas, I know that adds a bit more. Those tortilla shells have carrots and pumpkin included in them and they taste great. My kids also love the fact that the are orange. Chicken Caesar Wraps Ingredients: 4 garden vegetable tortillas 8 cups of thinly sliced Romaine lettuce 1/2 cup of real bacon crumbles, I use Kirkland ones 1/3 cup of freshly grated Parmesan Reggiano cheese 2 chicken breasts, cooked and thinly sliced 1/3 cup of Renee's Mighty Caesar dressing (or any Caesar salad dressing that is thick) Directions: In a large bowl toss all the ingredients together. Make sure the dressing has evenly coated all the ingredients. Place 1/4 of the mix into a tortilla shell, fold by bringing the sides into the center, then turn the tortilla shell where there is a open flap. Tuck the flap over all the folded sides and tuck over the filling, and continue to wrap until it is tight. Cut the wrap on an angle down the center. Repeat the process for the other 3 tortilla shells. You can eat it right away or wrap it up and take it with you. I absolutely loved these and will for sure be making them again. A few things you can add to it are some croutons, you can swap the chicken for steak, you can add real bacon strips, if you are vegetarian I think roasted chick peas would be great in here as well.
