I love Pinterest for many reasons, and one is all the delicious recipes I can have access to and try. Sometimes they are a total fail and sometimes they work out fabulously. I am also the type of person to take a recipe for guidance and tweak it to my own taste. Last night I tried a recipe for crock pot chicken Gyros, it turned out really well and I liked the settle flavors of the chicken but it just reminded me of soft tacos but Greek style!
I couldn't find pocketless pita bread at the store so I grab a package of garlic flavored Naan bread, which hello garlic and Greek food go hand in hand because isn't that what all Greek food have in it! I added the sides that we like lettuce, tomatoes, cucumbers, red onions, feta cheese, peppers and homemade Tzatziki sauce and rice pilaf. Some people might like olives on the side, I like olives but the hubby does not so they aren't on the plate. Some other sides could be spinach and artichokes as well. Play around and enjoy!
Crock Pot Chicken Gyros:
Ingredients: 2 boneless chicken breasts 3 cloves of minced garlic 1/4 cup lemon juice 3 tablespoons of diced onion 1/4 cup water 1 tablespoon olive oil 2 tablespoons red wine vinegar 1 teaspoon oregano dash of salt and pepper Directions: Place chicken breasts in crock pot. Mix all other ingredients in a separate bowl and then pour over chicken breasts. Cook on high for 3-4 hours or low for 6-8. Once cooked take chicken breasts out and place in a bowl and then use an electric beater and shred the chicken, or you can use two forks and shred it (I find the electric mixer or your kitchen aid with a paddle attachment super easy) Serve with all the sides and enjoy, I like to place my chicken in the middles and add the toppings then spread a big dollop of Tzatziki on top.
