A couple of years ago I went out for lunch with a friend. This place had a sandwich that stuck out to me, so I ordered it and I was so not disappointed. That my friends was a chicken Parmesan sandwich and the taste of it has not left my memory! You could probably tell by now with following my blog or even visiting, that I love my sandwiches. I just love that they can be elevated with fancier ingredients but also be super simple and fast in order to feed my hungry family. I love all the different breads you can have, they act as a warm, soft and chewy hug for the ingredients that will be placed inside. I seriously could go on for hours talking about sandwiches. This one in particular was pretty simple to make and hit the spot for sure! In this I used almond flour for part of my dredge, you could use panko bread crumbs or even flour. I find the key is to make sure you fry it till the outside is golden brown, that helps with the crispy exterior of the chicken, yet keeping the inside moist and tender. Chicken Parmesan Sandwich Ingredients: 1 1/2 cups of almond flour 1/4 freshly grated Parmesan cheese 2 teaspoons of dried parsley 1 teaspoon of salt 1 teaspoon of white pepper 2 large chicken breasts, cut each into 3 pieces 3 large eggs 2 cups of marinara sauce 1 cup of shredded pizza mozzarella 3 ciabatta buns, or any bun of your choice Canola oil, for frying Mayonnaise Directions: Preheat oven to 400F. In two pie dishes, or bowls, add the almond flour, parsley, Parmesan, salt, and white pepper in one. In the other add the eggs and whisk till the resemble scrambled eggs. Take your chicken breast pieces, place them in the eggs and turn over to evenly coat them. Then take them and place them into the almond flour coating, turn over and evenly coat each side. In a deep frying pan, add 2 inches of canola oil. Turn the heat up to a medium high heat and bring the oil up to 350F. Once the oil is heated, gently place 2 to 3 pieces of chicken into the hot oil. Fry on each side for 3 to 4 minutes or until they are golden brown. Place the done chicken on a parchment lined baking sheet. Place the fried chicken in the oven while other pieces are cooking. When all the chicken is fried, cook for 10 minutes in the oven. Add shredded mozzarella on each piece of chicken. Cook until the cheese is melted and bubbly. Cut open your buns, toast the buns in a toaster until golden brown or crispy. Spread some mayo on each side, place two slices of the chicken on each sandwich. Add 1/2 cup of marinara sauce on top of the chicken, place the top of the bun on the sandwich and serve right away.
