Chicken Quesadillas 21 Day Fix Style

I have had a few people ask about the chicken quesadillas I made last night, they were super easy and believe it or not were not bad for you. The great thing about the 21 Day Fix diet is it does allow you a bit of cheese a day or other things in the blue category but I mainly use it for cheese. 

Ingredients:

2 Chicken Breasts
1 1/2 Teaspoons of Cumin
Salt and Pepper
2 Diced up Bell Peppers (I used green and yellow)
1/2 Red Onion sliced thin
1 Small can of pickled Jalapenos or about 1/4 Cup
2/3 Cup of Cheddar Cheese and Mozzarella mixed
2 9 inch Whole Wheat Tortilla Shells

Directions:
In a medium saucepan add chicken breasts and fill it up with water about 1 1/2 inches deep. Turn on medium high, season chicken with salt and pepper and place lid on the pot. Cook for about 10 minutes and then turn the chicken over, season again and cover for another 5 to 10 minutes. Make sure chicken is cooked all the way through.
When chicken is cooked place in a bowl and sprinkle with cumin, either use a hand mixer, fork or your Kitchen Aid and shred the chicken. Place off to the side.
Dice up your peppers into tiny pieces, cut your onions so they are thin slices, and dice up the jalapeno slices, set all to the side.
Shred your cheeses and mix them together. You could probably save time by buying the mixed bags of shredded cheese I just didn't have any. 
Warm up your panini press, or skillet, lightly coat with coconut oil. Once heated assemble your quesadillas by adding the cheese first, then peppers, onions and jalapenos, then place shredded chicken on top. Fold the shell in half and place inside the press or on the skillet. If in a skillet you will want to flip over the quesadilla to cook evenly. Once the cheese is melted and the peppers and onions are slightly soften remove from heat and cut into triangles.
Serve with  1/2 cup plain Greek yogurt and 1/2 cup salsa, you can also have cilantro and a lime wedge but I didn't have them in the fridge so no dice!

21 Day Fix Portions:
1 1/2 Red
​1 Yellow
1 Blue
1 1/2 Green
1 Tablespoon

*Notes: I prefer the panini press because it helps to cook the quesadilla evenly and it also gives those awesome grill makes that I love on food. If you don't have one you should get one, it was one of the best gifts I have gotten! Also if you don't like a lot of heat don't add as many jalapenos.

is the whole thing a serving or is half of one a serving?

Half of the recipe is one serving. This is enough for 2 people or 2 servings. Hope that helps!
