In Kelowna there is this Pub/Restaurant that everyone who is local knows about, the servers all wear kilts and they have 2 for 1 appies past 9pm. It was such a great place to go with friends after a movie, or activity and we needed something to eat. One of my favorite things there, was actually this water they made that was a lime water but they called it slim water, that stuff was so good! Kelly O'Bryans is a well know restaurant that started in Kelowna but has expanded to quite a few locations all over B.C. Sadly there are no locations anywhere else in Canada, so whenever I get a craving for some of there awesome appies I just have had to fidget with a recipe and make them myself.

I did look all over the internet to see if there was any cop cat recipes for their special sauce they use for a lot of things. There was one website that I printed off the recipe from about 7 years ago but it didn't taste right, I didn't try to make it again for awhile. Last year I decided to try to put together what I thought tasted bang on. So here is my copy cat version of one of there most loved dishes and side dish at their restaurant. For copy right reasons I will not use the actual name of the dish but I will Just call them Irish Style Waffle Fries (which lets be honest they are not really Irish style). 

Irish Style Waffle Fries:

Ingredients:

1 bag of McCain lattice cut extra crispy fries
1 cup of shredded old cheddar cheese
3 green onions, diced 

For the sauce:

1 1/2 cups of mayo
1 1/2 tablespoons of yellow mustard
1/4 cup of white vinegar
1/2 cup of honey
1/2 teaspoon of dried basil
1 teaspoon of dried tarragon
1/2 teaspoon of white pepper
1/4 teaspoon of salt
1/2 teaspoon of garlic powder


Directions:

A few hours before making the fries, mix together all of the ingredients in a bowl using a whisk. Transfer the sauce to a jar with a lid and place in the fridge to allow the flavours to meld together.

When it is time to make the fries preheat the the oven to 375F, the package says to cook on a higher temperature but I find they don't crisp up as well. 

On a parchment lined baking tray lay out the fries so they are in one layer. Bake for 40 minutes, turn the fries over half way, then after the 40 minutes check to see how crispy they are. You want a good crunch on the outside but have them still be soft in the middles.

Once they are just about at the done stage, remove them from the oven and spread the cheese all over the top and then turn the heat up to 425 and cook them for 5 more minutes or until the cheese is all melted. 

Remove them from the oven and sprinkle the green onions on top. Take what you want and place on your plate, serve the sauce in a small bowl on the side and enjoy!

I didn't take too many pictures when I made these because the lighting was not that great during the day, but the next time I make them I will add more pictures.

These are so good on the side of a steak or chicken, they are even great just to serve on a big sheet at a party for people to enjoy.
