Dill pickle pizza?? I know what you are thinking! That sounds weird and gross, but all I have to say is don't knock it until you try it! Have you ever had Philadelphia's cream cheese dip that is pickle? If you like that stuff with chips then this is a pretty similar concept.

This last week we went to the Calgary Stampede and there was a frenzy of dill pickle treats. Among them were popsicles, cotton candy, ice cream and a few more items. When I heard about the pizza I thought it would actually be pretty amazing, and I was not disappointed! I wanted to recreate it because going all the way down to the Stampede grounds to buy a slice would be ridiculous and expensive. I was willing to pay to $10 a slice to try it, but now that I have and know I like it, I will be making it myself.

Dill Pickle Pizza

Ingredients:

Pizza dough

For the sauce:
1 cup of sour cream
1/4 cup of mayo
1 tablespoon of dried dill weed
1 teaspoon of minced garlic
1/2 teaspoon of onion powder
1/2 teaspoon of salt

For the toppings:

8 slices of dill pickles, cut into smaller pieces
3 to 4 cups of pizza mozzarella
olive oil
dried dill weed

Directions:

Prepare the pizza dough by following the instructions on the link.

Prepare the sauce after the dough. Add all ingredients into a bowl and whisk together. Allow around an hour for it to sit in the fridge for the flavours to combine.

Once dough is done preheat oven to 450F. Using a large pizza pan grease with a bit of olive oil. Roll the dough out into a large 14 inch circle. Place the dough on the pizza pan. Using a fork poke the dough all over, brush with olive oil and let rest for 15 minutes.

Once the dough has rested, cook the pizza shell in the oven for 6 minutes. Remove from oven, spread the prepared sauce on top of the pizza shell, sprinkle cheese all over the top, place pickle pieces all over and finally sprinkle more dried dill weed on top.

Cook in the oven for 10 to 15 minutes or until cheese is melted and has brown spots and the crust is a golden brown. Once cooked remove from the oven and cut into pieces.

Enjoy!

Honestly this was the best pizza I have had in a long time, but I also don't mind strange combinations of flavours, although it really isn't that strange! Trust me! Just give it a try.

Happy Summer!
