Eggs Benedict Quiche

Hi all!

I thought it was about time to make another post. I have been recipe testing and thinking about content that I want to share on here. Life gets busy as we all know, I have had some fun baking orders lately and I recently applied to season 2 of the Great Canadian Baking Show, so we will see what the future has in store!

I am a big fan of breakfast foods, like I could eat them for every meal every day. But I don't necessarily like pancakes, more like eggs and the good stuff! About a year ago we had brunch with our close friends, and I really wanted to make a quiche but also eggs Benedict. So I decided to combine the two, the results were pure magic. It wasn't as fussy as making a whole bunch of poached eggs and it feed a crowd, but it still had all the wonderful aspects of eggs benny.

If you are looking for a great brunch dish to make soon then you need to save this one.

Eggs Benedict Quiche:

Ingredients:
Pie crust for 1 - 9 inch tart pan
8 large eggs
1 cup of heavy cream
1 cup of milk
1 cup of shredded Havarti cheese
1/2 cup of shredded asiago, parmesan mix
1 cup of diced cooked ham
1/8 cup of diced chives
1 teaspoon of salt
1 teaspoon of pepper
1 batch of Hollandaise sauce

Directions:

Preheat oven to 375F. Roll out the pie dough and place it in the tart pan and gently press into the edges. Set aside.

In a bowl combine all the ingredients and whisk together. Pour into the prepared tart pan. Place in the oven and bake for 60 minutes, or until the center is set and doesn't jiggle too much.

While the quiche is baking prepare the Hollandaise sauce by following the instructions on the link.

Once the quiche is done baking, allow to cool for 15 minutes before removing the tart ring. Serve with warm Hollandaise sauce and a sprinkle of diced chives.
