Today I was thinking about Kelowna, probably because we will be going to Kelowna in just a few days and I am looking forward to seeing my family. Then I got this craving for something that reminds me of home, and my Grandpa. These cookies my Mom named them "Man Sized Cookies" because they are huge!
My Grandpa, who is my Dad's Father, absolutely loves these cookies and which why I call them Grandpas favorite cookies. These are super soft, chewy, have hint of cinnamon and for a raisin cookie even I like them. Honestly I am not a big fan of raisin cookies, I usually avoid them if there are other options to choose from. These though, they really are a great cookie... even though there is no chocolate in them. I have thought about putting chocolate in them but then never do because they are great the way they are.
Grandpas Favorite Oatmeal Raisin Cookies:
2 cups of raisins
1 cup of water
1 cup of butter or shortening
2 cups of white sugar
3 cups of all purpose flour
1 cup of rolled oats
1 teaspoon of baking soda
1 teaspoon of baking powder
2 teaspoons of cinnamon
1/4 teaspoon of nutmeg, or all spice
Preheat oven to 350F.
In a medium sized pot pour the water in and then add the raisins. Boil them until the raisins soak up almost all the water. Remove from the heat and cool for a few minutes.
With your stand mixer, or by hand, stir the butter into the raisins. When the butter is all melted stir in the sugar.
Add the eggs and mix until all incorporated.
Add all the dry ingredients and mix until dry ingredients are all wet and combined.
On a parchment lined baking sheet drop the dough onto it in large mounds. About 6 cookies per sheet.
Bake for 15 minutes, or until they are a light golden brown and are cooked through. Remove from the oven and allow to cool for 5 minutes on the baking sheet, then transfer to a cooling rack.
So go and grab yourself a glass of milk and give these cookies a try, I promise you won't be disappointed.
I did however find out both my sisters hate raisins, well I guess it's their loss! Good thing I have brothers who will eat these all!
