Happy Monday everyone, I know you are probably thinking "Gah it's Monday why should I be happy". There are all these memes and stigmas about Mondays and how they are the worst, some Mondays are terrible but so are some Saturdays or other days of the week. How about we be as positive about Monday as any other day of the week. Look on the bright side of Monday, it is the start of a new week, so anything is possible, it is a new day so again take advantage of the new day! Part of my goals this year which I laid out in my my post "A New Year and New Goals" I said I wanted to be more positive and happy, so not looking at Mondays as a sucky day helps with the positive outlook on life.
What a better way to start your week on a positive not then by making yummy banana bread! One thing I try to do as much as possible is swap out some ingredients for some healthier options. If I can I cut out processed sugar where I can, or cut the white flour down and replace it with whole wheat, then I do. 

Lets just say, my little family loved it so much that I was only able to use half a loaf for the done pictures because they already devoured half of it! It really was that tasty.

This recipe for banana bread I adapted from The First Year blog. I liked her healthier one bowl banana bread. I just added a few non healthy things haha, what... my kids like chocolate chips in their banana bread and I like to put a bit of a topping on it once in awhile... does that mean I cancelled out all the other healthy swaps, maybe but what is life all about if I can't add chocolate into the mix? Am I right?
Greek Yogurt Chocolate Chips Banana Bread

​Ingredients:


3 ripe bananas
1/3 cup plain full fat greek yogurt 
1/2 cup honey
1 tsp pure vanilla extract
1 egg
3/4 cup of all purpose flour 
3/4 cup of whole whear flour
1 tsp baking soda
1/4 tsp cinnamon
2/3 cup of chocolate chips
1/2 cup of brown sugar
2 teaspoons of cinnamon
Pinch of sea salt

Directions:

Preheat oven to 350F, in a non stick loaf pan, grease it with some butter or oil and line the bottom with some parchment paper.

In a large bowl mush the bananas till they no longer resemble a banana. Add Greek yogurt, honey and vanilla, mix until combined.

Add the egg, and mix.

Stir in the baking soda, cinnamon and salt. 

Slowly mix in the flour, make sure you stop as soon as the ingredients are just wet and incorporated.

Add chocolate chips and fold in.

Pour the batter into loaf pan. In a small bowl combine the brown sugar and second amount of cinnamon. Sprinkle on top of the batter.

Bake in the oven for 45 minutes up until one hour, insert a knife or long tooth pick to make sure the center is cooked. 

Store in the refrigerator to keep it fresher longer, if not and you keep it in a bag on the counter eat within 2 days.

I always have a few bunches of over ripe bananas in my freezer. They are great to have for making banana bread, banana muffins or even my families amazing crater cake I shared with you all awhile back. 

So go make some banana bread, add some chocolate chips and eat a slice fresh out of the oven. Enjoy your Monday!
