It is the weekend, which means get togethers and a girls night. Tonight I am having some girl friends over, all our husbands are getting together to do a NHL fantasy draft party. I didn't think that was fair they get to have all the fun, so I invited all the girls over. Nights like this makes me happy because we get to enjoy yummy food that our hubbies usually dub "girly" food. I don't think this dip is necessarily "girly" but more just dang tasty. I love making hot dips that go great with some crostinis and scoop tortilla chips. This is a pretty easy dip to whip up and enjoy with some friends gathered round. Hot Artichoke and Spinach Dip Ingredients: 1 - 8 ounce brick of cream cheese, softened 8 cups of fresh spinach 1 - 14 ounce can of artichoke hearts, not in oil 1 cup of shredded Parmesan 1 1/2 cups of mozzarella 2/3 cup of sour cream 2 cloves of garlic minced 1/2 to 1 teaspoon of salt 1/2 teaspoon of pepper Directions: In a large saute pan, cook down the spinach on a medium heat until wilted and shriveled. Press some of the water out of the cooked spinach in a fine mesh sieve. Cut the spinach up into smaller pieces. Preheat oven to 350F. In a large bowl combine all the ingredients together, reserve 1/2 cup of shredded mozzarella and 1/3 cup of Parmesan, with either an electric hand beater or a spoon. Cream them together till everything is incorporated and mixed well. Taste and add more seasoning if you wish. Spread the dip into a shallow casserole dish, sprinkle the reserved cheese on top. Place in the oven and bake until bubbly and has brown spots on top. Serve right away with crostinis or tortilla chips. I hope everyone has some fun plans for the weekend, we start our week of celebrations. My hubbies birthday is tomorrow, our anniversary the day after and my birthday a week later!

Thank you for sharing your recipe for this, you read my mind!!! I sent my hubby to the store for ingredients!!! I'm going to use veggies and parmesan cheese chips to keep the carb count low! Thanks and yum!!!
