Shortbread cookies are one of those baked goods that when you do it right they literally melt in your mouth. I experimented today and decided to do a basic shortbread recipe but added a few flavors that I love to it. I feel they turned out really well but the first batch is just a little bit more brown then the second so therefore I used the second batch to take the pictures with. Thank goodness for multiple batches!
1 Cup of Butter Softened (I used Salted)
1/2 Cup Powdered Sugar
2 Cups of All Purpose Flour
2 Tablespoons of Lime Zest (2 to 3 large limes)
1/2 Cup of Mini White Chocolate Chips
1/4 Shredded Sweetened Coconut
Preheat oven to 350 degrees, Line two cookie sheets with parchment paper or a silpat.
Zest your limes and set zest aside. In your stand mixer, with the paddle attachment, cream butter and powdered sugar together until it is creamed.
Add flour and lime zest. Mix until a soft dough forms, it will take a few minutes and look quite crumbly at first but then it will come together. Incorporate the white chocolate chips with a mixing spoon.
Form the dough into a ball, on a counter top dust with powdered sugar and dust your rolling pin as well. Roll out till it is 1/4 inch thick and then use a round cookie cutter to cut out the cookies. I got around 26 cookies out of this batch.
Place cookies on the prepared baking sheets, add about 1/2 to 1 teaspoon of shredded coconut on each cookie. Bake cookies in the oven for about 12-14 minutes. Watch closely so that they do not go brown, you want a nice golden color to them (not a medium caramel color like my first batch!).
Once they are done baking let them cool on a rack. Then sit down and enjoy them on the side of a nice herbal tea or your choice of beverage.
I might make them a bit thicker next time, the best part of the base recipe of the cookies, which is butter, sugar and flour, is that you can totally play around with the flavors. Also you can change the shapes as well.
Make sure to watch them like a hawk closer to the end of cooking because it seems like it only takes a second for them to bake too long.
