I am a sucker for breakfast foods. Especially eggs Benedict and breakfast sandwiches! I don't know about you guys, but I love going to McDonald's or Tim Hortons and grabbing a breakfast bagel or and egg McMuffin. One of the saddest things for me was when they got rid of the biscuit at McDonald's up here in Canada. We only had it for a short while but man did I take advantage of it... I was pregnant and that was one the only things I could stomach. Some days all I want for supper is breakfast! This yummy breakfast sandwich you could totally make these ahead, wrap in plastic wrap and place in freezer bags. Then you can take them out one at a time, warm them up and BAM you have breakfast, lunch or a quick dinner. Just add the tomato and avocado after you warm it up, don't freeze the tomato and avocado with the sandwich. Loaded Breakfast Sandwich Ingredients; 4 large croissant rolls (I get mine at Costco) 8 large eggs 8 slices of honey smoked ham 8 slices of thick cut bacon extra old cheddar (the white stuff that is super sharp) 2 large tomatoes 1 avocado mayo and ketchup Directions: Cook your bacon according to the package, I like my bacon crispier, so I cook it longer then recommended. I would eat it burnt if I could get away with it. When bacon is done, drain off fat and set aside. Cut tomatoes into thin slices, cut the avocado into thin slices as well. Crack two eggs at a time and whisk together. In a small frying pan, heat 1 teaspoon of butter over a medium-low heat. Add the eggs, sprinkle some salt and pepper on top. Make sure the eggs are coating the whole pan, cool gently and let the bottom cook and become solid. Using a spatula fold over the cooked eggs, so it will look like a half circle or a taco shape. Cook until the inside is no longer runny, you can flip the eggs over once as well to ensure even cooking. Place cooked eggs on a plate and add some cut up extra old cheddar on top of the eggs. In the same pan as the eggs, fry up the ham over a medium-high heat. It will only take about 30 seconds on each side. Slice your croissants in half, add some mayo and ketchup to each side. Add the eggs, cheese, the cooked ham, bacon slices, tomato and avocado. Repeat the steps to finish the rest of the sandwiches. I do them one at a time to ensure even cooking temperatures and to help the cheese melt better. Dive right in and get messy! This sandwich will fill you up, if you want to cut it in half and have half in the morning and half later, you can do that too. I just made this my big meal of the day and enjoyed it all in one sitting. What is your favourite flavour combination for breakfast sandwiches?
