On Monday I went to get groceries from Costco, we had been gone for over a week and desperately needed groceries. To my surprise and great joy there were a lot of fresh ingredients that have come down in price and also just looked so dang good!
So I bought some beautiful limes and avocados, along with a fridge full of other fruits and veggies, but the limes and avocados have been screaming at me since then to make something with them. I decided a simple yet filling lunch was what I was going to utilize them for. I absolutely love the flavors of Mexico, cilantro, salsa and fresh limes just make my mouth drool and they are so fresh tasting.
Ingredients:
2 eggs half of a lime half of an avocado 1/4 cup shredded mozzarella cheese 1/2 cup salsa (I used my homemade canned Salsa but you can use any just make sure it has no sugar) 1/4 cup of cilantro 2 tablespoons full fat Greek plain yogurt A dash of salt and pepper Directions: Preheat oven to 350F, grab a small clay or corningware baking dish and set to the side. Shred the mozzarella cheese, cut the avocado, cut the limes, chop the cilantro and set to the side. Layer the salsa on the bottom of the dish, crack eggs on top on each side, layer avocados around the eggs, sprinkle with the cheese. Place in the oven and bake for about 15 to 20 minutes or until the egg white are no longer runny. Once cooked sprinkle cilantro on top and dollop the Greek yogurt in the center. Squeeze the limes on top and enjoy!
You can add whatever you want to it as well like beans and rice or other veggies would go awesome with this. It is also 21 Day fix approved and is a gluten free lunch. I would also say it is Keto friendly, I always say the greatest thing about cooking is you can change and cater it to meet your needs.
