Mile High Sub Sandwich

I had scheduled to do this post for tomorrow but I kept thinking about that sandwich and decided, nope I was going to share it today!

Have you guys been to the deli section of a Safeway grocery store? There is a sandwich there that they call the "Lumberjack", it is the perfect sandwich to get to feed lots of people and especially last minute. Seeing as I live on a ranch and about 30 minutes to the closest Safeway I felt it is easier to just have the ingredients and make it myself.

You might be thinking why I would share how to make a sandwich, and yes I do have a fair amount of sandwich posts, but I love them! They are easy to whip up last minute, you can cover all the food groups in one bite, and they fill you up. Plus a huge bonus is that there are so many varieties of sandwiches, the combinations are endless.

Mile High Sub Sandwich

Ingredients:

1 large loaf of ciabatta or french bread
1 package of panini deli ready pack by Citterio, or buy meat individually prosciutto cotto, mortadella and sweet capocollo sliced meat.
8 slices of monterey jack cheese
lettuce
tomatoes
red onions
pickles
avocado
Dijon mustard
mayonnaise

Directions:

Slice bread in half width wise, but do not completely cut through the other side.

Open the bread up nice and wide and then slather with mayo and make sure to cover the entire surface and get all the corners. Do the same with the mustard.

Slice all the veggies up and set aside. Layer the sandwich starting with the meat first. Then top with the cheese, and then all the veggies. 

With a large bread knife press down the toppings as you close up the sandwich by folding the top over. Place on plastic wrap and wrap the sandwich up tight and then place in the fridge for 30 minutes. I find that helps things stick together better.

When ready to eat cut up into slices and try not to get messy!

I love slicing open a nice fresh loaf of ciabatta bread or French bread and seeing all those beautiful bubbles. To me it means it is going to be a great bread.

Those giant awesome pickles are the ones I canned this past summer from my parents garden in Kelowna. I can't buy store bought pickles because once you have my Grandpa Ross's recipe you won't ever be able to eat store bought ones again. Maybe I will share that recipe in the summer when I go for a month to do my canning.

This sandwich usually feeds us for two meals because it is seriously that massive. I can't really fit it all in my mouth. I usually add some avocado to mine, the hubs doesn't really care for it, but I like the extra creaminess of it.

This is also the perfect sandwich to make up for a picnic or day at the beach. We have also made them up for road trips so we don't need to stop to eat, but we never really stop to eat when we are driving. 

Also if you want to make your own bread a great one for this is actually my post for French Bread. I have also made these sandwiches with slices of bread verses the large loaf, a wonderful artisan bread makes for a perfect sandwich.  

Grab lots of napkins because you will need them, I am always covered in juices while chowing down on these. Also does anyone else find by the end of a sandwich they either have too much bread and not enough filling, or too much filling and not enough bread? I wish it could be the perfect bite through the whole experience!
