Hello friends! It has been awhile since I have posted anything on here. It has been a busy few months with my family, health, and projects! Early September I ended up having surgery where they were able to properly diagnose me with Adenomyosis. I was so grateful to finally be taken seriously with the pain I have been going through for 21 years now. With the surgery I am not on a path of recovery, healing and hopefully better days ahead! My baby sister also got married in October and we were able to go down to the wedding. She is the last of the girls in our family to get married and now the three of us are married ladies! We have a fun tradition where we take a picture of the sisters kissing the bride, so now that circle is complete! In the last two months I also decided to put out there a new option for Holiday baking and ordering through me. It ended up being such an overwhelming response to a simple picture and advertising on Facebook that within 24 hours I had to shut down orders because I hit my absolute max for what I was expecting. I decided to make some cute Halloween sugar cookie boxes, it came with three different buttercream icings, sprinkles, candy corn, and 24 sugar cookies in various sizes. I had such a great response from it that I will be better prepared for the already mile long orders for Christmas, which I haven't actually started orders yet, I just have people who have asked to be on the list. What a cool experience that was! In between all that Home Hardware reached out to me and I was asked to take pictures for the launch of their Kuraidori Sous Vide Precision Cooker. Details on that project will come soon! I also celebrated my 33rd birthday and was gifted a micro lens for my camera and was able to buy a tripod that I can now take better pictures and videos with! I decided to jump right in and attempt my first ever cooking video! So here you are.... my first video for my Mouth Watering Chicken Bean Dip recipe. Mouth Watering Chicken Bean Dip Ingredients: 1 - 8 ounce block of softened cream cheese 2 cups of shredded chicken 1/4 cup of pickled Jalapenos 1 Tablespoon of salt and pepper 1 teaspoon of cumin, garlic and onion powder 2 cups of refried beans 2 cups of finely shredded Cheddar Jack cheese Directions: Preheat oven to 425F In a bowl mix together cream cheese, chicken, jalapenos and spices. Place the mixture in a 8 by 8 inch casserole dish or another small oven safe baking dish. Make sure to spread into all corners. Take refried beans and spread on top, sprinkle the cheese on top of the beans. Place in the oven and bake for 20 minutes, or until cheese is melted and slightly brown and dip is hot and bubbly. Remove from the oven and serve with taco chips or veggies. I have made this dip twice now, we love it! If you want it spicier than add more jalapenos. It is the perfect dip for Football games, or watching the hockey game with friends as well. I have a ways to go to figure out this whole video thing, but for a first try I think it turned out pretty good! Happy Eating!
