Every year for Boxing Day I have been making a big dinner for the family. I always feel like a mooch during the holidays because everyone else cooks and I get to relax! So for a fun tradition, my husband and I decided that we would do a big Boxing Day dinner so that people who had to cook the days prior didn't have to on that day. Here in Canada, Boxing Day is like Black Friday, except most Canadians don't try to shoot each other over the sales. In my whole 31 years of life I have only gone twice, and each time was seriously not that crazy. It gets busy and more people tend to go during the week because there are just as many good sales during the week then on the actual day. So today I am getting the meal ready for tonight, we are having Prime Rib with the bone in. I am hoping to post that as well in a few days. I know it's been two weeks since I have posted anything new. We all got one of the worst flu bugs I have ever had. It was one of those awful achey, sore throat, chills, fever, where you feel like a truck hit you type of bugs. It was a text book actual flu bug and man did it wipe us all out and SUCKED! So needless to say I have been out of commision and then the holidays came and I wanted to enjoy my family. Some exciting news is my hubby suprised me and got me an amazing Nikon 3400 DSLR Camera for Christmas! I was so excited and couldn't believe it! So now I can take amazing pictures of food! Well and I guess my children haha. Here is a great little recipe that is actually featured on the cover of Wal-Mart's "Live Better" free magazine that they hand out in their stores. I love this magazine and have actually used quite a few of their recipes. This is a super simple, quick but delicious no bake cheesecake. I used disposable plastic wine glasses to hold the dessert in. I also did not use real gingersnap cookies, the store I went too didn't have them, they only had Gluten free ones that were $7.99 for a tiny bag. So instead I used these cookies called Spice Snaps by Dare under the brand Simple Pleasures. They are super tasty little cookies that have the perfect snap! I am also thinking they would be great with their hint of spice to use instead of graham crackers in a cheesecake base. Easy No Bake Gingersnap Cheesecake Cups: Ingredients: 1 box of spice snaps by Dare, or gingersnaps 1 block of cream cheese 1/2 cup of granulated sugar 1/2 cup of 14% mf(milk fat) sour cream 1/2 teaspoon of cinnamon 1/4 teaspoon of ground ginger 1 cup of whipping cream 12 whole spice snaps cookies Directions: Remove the cream cheese from the fridge and allow to come to room temperature at least 2 hours before using Take the spice snap cookies and remove them from the package. Place them inside of a food processor, or if you do not have a food processor place in a ziploc bag. Pulse the food processor until the cookies turn into crumbs, or with a rolling pin bash the Ziploc bag full of cookies till they make crumbs. In a medium sized bowl beat cream cheese and sugar together with a hand mixer, until light and fluffy. It takes about one minute. Add sour cream and spices and beat together for an additional minute. With a whisk attachment beat the whipping cream in a separate bowl until stiff peaks form. It takes me about 3 minutes to get to this point, don't over whip or you will end up with unsalted butter. Fold in the whipping cream into the cream cheese mixture. In small glasses layer the ingredients, starting with the cookie crumbs first, then add about 1/3 of a cup of the cheesecake filling, then more cookie crumbs, then cheesecake filling. Then sprinkle a bit of crumbs on top and then top with a whole cookie. Chill in the fridge until you are ready to serve. Oh man just looking at the pictures make me happy because already the quality is better. I will be having fun playing around with it, I have a lot to learn! I am looking forward to this little treat tonight! It is not too heavy and I find is the perfect hint of spice for a holiday treat, I mean it's giner flavoured, what says Merry Christmas more then that spice! Merry Christmas everyone!
