Puffy Pancakes (Or Dutch Pancakes)

So it looks like I have been slacking this week again, actually not slacking just crazy busy and haven't had a lot of time to blog on here, but here I am and I apologize for the week of absence. Last weekend was Canadian Thanksgiving and my 31st birthday, so it was full of family and celebrating.

​There was lot's of pie to be eaten and of course there had to be some form of cake for me to blow out candles. I got pretty spoiled and was super excited to get some fun plates and serving ware from the Pioneer Woman line from Walmart and some cute things from Anthropology. Honestly my greatest gift this weekend was a plaque made for me that celebrated my service as a missionary that was almost 10 years ago. A lot of Mormon congregations give them to returned missionaries after their time serving but for some reason I never got one and it always bugged me. Well my amazing in laws got one done for me and even found my favorite scripture for it, it made me cry I was so touched by the gift, they knew how much it meant to me.

Anyhow! This week has been busy, my husband took the week off so we could get some things done around the house so our home looked like a bomb went off because we are cleaning and reorganizing and  doing some much needed shifting. But last night as I was making a easy peasy dinner I realized it was the perfect one to share. I did a post on this last year on a different blog I guessed wrote on but I wanted to re do it on my own blog, plus I got to use my fancy new plates! ​​
Ingredients:
Serves 4 People
4 Tablespoons of Salted Butter
1 Cup of Milk
1 Cup of Flour
1/2 Teaspoon of Salt
4 Eggs

Directions:
Preheat oven to 400F, in two pie plates melt 2 tablespoons of butter in each pie plate in the oven. Make sure the butter is bubbly and completely melted. Once melted take out of the oven and move or brush the butter all over the inside of the pie plate to evenly coat it. 

While the butter is melting in the oven prepare the batter. In a blender add all ingredients and blend until it is all incorporated and smooth. it should only take 1 minute, do not over mix the batter or the pancakes may not puff up. 

​Once you take the pie plates out of the oven and they are coated with butter, pour the batter into them and place back in the oven and cook for 30 minutes or until they are puffed up and golden brown. Serve right away.

Note: These pancakes are like a giant Yorkshire pudding and you can eat them with savory toppings like cream cheese and smoked salmon, or you can serve them with berries and whipped cream with syrup. I just love how easy they are and pretty much everyone has these ingredients in their pantry. Plus I love watching the kids watch them puff up in the oven, they think it is so cool to watch.
