I love the smell of barbecuing in the summer, it is a happy place for me. It is now officially BBQ season and my calendar is full of meals that we cook on the grill. We don't have air conditioning in our house so the least amount of cooking I can do in my house in the summer the better. My last post was quite long so this post is going to be the opposite. This is a fairly simple recipe that takes around 30 to 40 minutes to cook, and also has a handful of ingredients. Isn't it great when your ingredient list is super short, it makes me go "Yes I can whip this out fast". Do you have a favorite fast side dish you make? Roasted Broccoli and Sweet Potatoes Ingredients: 2 medium sweet potatoes 4 cups of broccoli pieces 1/4 cup of extra virgin olive oil 1 tablespoon of smoked paprika 1 1/2 teaspoons of onion powder 2 cloves of garlic, minced 1 1/2 teaspoons of black pepper pink Himalayan sea salt to taste Directions: Preheat oven to 400 F Peel and cut your sweet potatoes into 1 inch pieces. Cut up the broccoli so the pieces aren't so large. Place in a large bowl. Add spices and olive oil. Mix all together so the veggies are coated well. On a parchment lined baking sheet, spread out the vegetables so they are not touching and an even layer. If you have to use two sheets then do so. Bake in the oven for 30 to 40 minutes or until the veggies are slightly brown in places and are tender and crispy. Turn the veggies over once in the middle of cooking. Serve on the side of a good steak or whatever you are serving for supper. See was that not so simple! Plus my husband LOVED these, which was a good sign because he used to only eat cooked broccoli by smothering it with cheese sauce. I do love roasted veggies, they always give a nice smokey flavour. Paprika is a great spice to use on veggies as well, it just adds some depth to them, let's face it veggies usually don't taste like much. Happy Cooking!
