Such a simple yet delicious side to any dish! They take about 10 minutes to assemble and a total of 25-30 minutes to cook in the oven. Cooking doesn't have to be complicated all the time, but it also doesn't have to lack in flavour! Okay you got your meat defrosted and cooking, you may even have a salad ready but wait! You forgot about a starch or another side dish! Or let's say more people decided to show up to a dinner party then RSVP too (which we have all had happened) and you need something to stretch the food out. Well a perfect side dish to have is this one, simple and fairly fast. I am a firm believer that having potatoes in various sizes in the pantry is a must. They can cook pretty fast and they fill people up, also I don't know a lot of people who are allergic to potatoes, if you are I am so so sorry. Potatoes are a food group to me on their own, in every shape and form and in every cooking method. I may have a slight problem, at least they are a root vegetable am I right? Roasted Parmesan Potatoes: Ingredients: 25 - 30 small potatoes (I use the mixed bag from the Little Potato Company) 1/2 cup of fresh parsley 3 large sprigs of fresh rosemary 6 large sprigs of fresh thyme 1/2 cup of extra virgin olive oil 1 cup of shredded parmesan reggiano cheese salt and pepper to your liking Directions: Preheat the oven to 400F. Wash potatoes and then pat dry with a clean tea towel. Cut the potatoes width wise so that they look like half a ball. Place in a large bowl and set aside. Grab the rosemary and thyme sprigs and holding them on one end slide your finger down the sprig to release the little leaves and needles. Remove the leaves from the stems of the parsley. On a cutting board gently dice the herbs, place to the side. In the bowl with the potatoes add all the ingredients minus the cheese. Toss the potatoes so that they are evenly coated with the seasonings and oil. In a 9 by 13 inch glass baking dish add the cheese and make sure it is an even layer on the bottom. Take the potatoes and place them cut side down, on top of the cheese. So the flat side will be facing down and round side up. Place in the oven and bake for 25 to 30 minutes. Check on them at the 20 minute mark, poke them with a fork and if the cheese is golden brown and the potatoes are tender then they are done. Serve right away and enjoy! See don't those look amazing! When you do the layer of cheese and bake the poatoes on top they form this awesome cruchy skin on the potatoes. Even though they are easy and simple they win everytime!
