Smoked Salmon Spread

Well hello Monday! I have been busy busy packing and getting things ready to leave with my two littles for August. This whole weekend though I have been thinking about this spread I had a long time ago. I sat down and decided to try and re create the flavours, thankfully I recently bought some liquid smoke to use in the Canadiana burger. I looked in my pantry and freezer and realized I had everything I needed to try and create this.

This is such a simple recipe, like most of mine. All you need is the ingredients and a food processor and you are set to go. If you wanted too with this spread, is to refrigerate it for 4 hours or until it has firmed up, and then form it into a ball and roll it into some ground nuts, or even toasted Panko bread crumbs. Then you will get a smoked salmon cheese ball!

Smoked Salmon Spread

Ingredients:

1 - 8 ounce package of cream cheese, softened
1 can of Sockeye Salmon
1 tablespoon of liquid smoke (I like mine really smokey, decrease it to 1/2 tablespoon to start)
juice from 1 whole lemon
1 tablespoon of grated onion
5 to 6 slices of smoked salmon
1 green onion, diced
salt and pepper to taste

Directions:

Open and drain the can of salmon. Remove all the bones and skin from the salmon.

Place all the ingredients, except the smoked salmon and green onions, into the food processor. Pulse the ingredients, and mix until all the ingredients are smooth and combined. Taste and if it needs more seasoning then add more.

Cut the smoked salmon into thin strips and reserve one whole piece for garnish. Fold in the smoked salmon into the spread.

Place in a bowl and refrigerate for 2 hours to allow to firm up a bit. Before serving add on extra piece of smoked salmon and sprinkle with chopped green onions.

Serve with toasted baguettes or even with chips.

Hope you all are enjoying the summer as much as I am. It has been a busy summer full of some great trips and family fun! We recently took a mini trip to Edmonton to visit family and I got to see the Alberta Legislature building up close for the first time. I love little weekend getaways so that we can explore what is around us as well. We are thinking next year we will do lots of Southern Alberta mini trips.

Gosh I just love my little family!

Happy Cooking!

Mmmm! Love smoked salmon! Living here on the west coast, we smoke our own fresh salmon, but you've come up with a great alternative! Looks delicious!

That is one thing I miss about living in BC is having access to fresh Salmon and being able to catch them. But thank goodness for the stores :)
