Today was one of those shopping trip days where you cringe when you get the bill. I had let my freezer run empty with meat, and our fridge was pretty bare. We have been so busy lately and my poor hubby has had so many meetings that I haven't been making big dinners because I know the kids don't love it as much as my main squeeze. So off I went to Costco and Superstore for some much needed restocking. When I got there I was so surprised and excited to see in the vegetable and fruit cooler, that they now have spiraled zucchini and butternut squash noodles! It just takes out that extra step of doing it yourself. When I saw it, I got inspired. Spicy Chicken Veggie Noodle Salad Ingredients: 1 package of zucchini and butter squash noodles, or make 8 cups of your own 1/2 of a purple cabbage, cut thinly 4 green onions, diced 1/2 cup of dry roasted (unsalted) cashews, cut into smaller pieces 1/2 cup of cilantro, lightly chopped 2 chicken breasts 1/2 cup of lime juice 1/2 teaspoon of ground pepper 1 tablespoon of olive oil 1 garlic clove, mined 1 tablespoon of red chili flakes For the peanut sauce: 1/2 cup of smooth peanut butter 2 tablespoons of vinegar 2 tablespoons of lemon juice or lime juice 3 tablespoons of olive oil 1 tablespoon of soy sauce 1/2 teaspoon of salt 1/2 teaspoon of red pepper flakes 1 large garlic clove, minced 2 tablespoons of honey 2 tablespoons of Sriracha sauce Directions: In a large Ziploc bag, add the lime juice, olive oil, minced garlic and chicken. Close the bag and rub the chicken with all the marinade. Let sit in the fridge for 1 hour before cooking. Heat a frying pan with 1 tablespoon of oil to a medium heat. Place the chicken breasts in the heated pan and cook until the center is no longer pink, and is cooked through. You want a nice sear on the outside. Remove the chicken and allow to cool slightly. In a blender add all the ingredients for the sauce. Blend until all incorporated and smooth. Taste and add more sriracha sauce if you like it more spicy. In a large bowl, place all the ingredients for the salad. Cut your chicken into thin strips and lay on top of the salad. Drizzle the sauce on top and mix toss together. That is it! Eat and enjoy! Doesn't that just look gorgeous! It was simple, little amount of cooking, and is packed full of flavour! Enjoy! Happy Cooking!
