I came across this recipe about 4 years ago and I thought it was absolutely to die for. The problem is I didn't get the website I just wrote it down. These muffins are super soft and moist in the middle, and the chocolate chip ratio is quite perfect in my opinion. I find muffin recipes can actually be hard to master as some end up super dry and dense, these ones did not have that as a problem at all.
This really is an amazing banana chocolate chip muffin recipe and I am willing to share with everyone! Make them, let them fill your house with the wonderful aroma and when they are done eat one of those warm, soft, chocolaty muffins!
The Absolute Best Banana Chocolate Chip Muffins
1 1/2 cups of white flour
2/3 cup of sugar
1 1/2 teaspoons of baking powder
1/4 teaspoon of salt
1 cup of mashed ripe bananas (I use over ripened bananas that I have frozen and then defrost when needed)
1 large egg
1/2 cup of butter melted
1/4 cup of milk
3/4 cup chocolate chips
Preheat oven to 350F and then line the muffin tin with paper liners, or grease the muffin tin really really well.
Mix all the dry ingredients in a large bowl and set aside.
Melt butter and pour into a medium bowl, add all other liquid ingredients and mix well.
Pour liquid ingredients over dry ingredients and stir until just combined. Do not over mix, it will cause muffins to be dense and not fluffy.
Fold in chocolate chips and then fill the muffin tins to 3/4 full.
Bake muffins till the tops are pale yellow of a light golden brown and a tooth pick that is inserted comes out clean. For me it is about 32 minutes.
Remove muffins and place on a wire rack to cool, be careful taking them out they will be very hot (melted chocolate chips are like hot lava when touching skin!!).
Makes 12 glorious muffins!
You could also make these into mini muffins for a nice little snackaroo for the kids, you could even make 6 jumbo muffins out of the batter as well.
