Happy Monday! We had some amazing weather on the weekend that left me slightly sunburnt and more optimistic towards Spring and Summer.
I don't know about you but there are certain types of food that I love. I love Mexican, Italian, classic Canadian or American food (good ol hamburgers), but the one type of food that I love more then anything is Greek food. It might be because of all the garlic, fresh herbs and feta cheese. It just makes me happy, and we have it a few times a month. Souvlaki is one of my favorite dishes to make, it is small cubes of meat that are marinated and then grilled on a skewer. For me the best part isn't the meat, it's the tzatziki sauce that is served beside it.
I discovered tzatziki sauce when I was around 13 years old and it blew my mind! I have been making it ever since and often love it with some grilled pita bread. The traditional tzatziki uses Greek yogurt, but I like to combine Greek yogurt and sour cream. For me it gives it a bit more of a creamy texture and I like the zip in it.
1 cup of sour cream
1 cup of Greek yogurt
1 large whole cucumber
2 to 3 cloves of garlic minced
1 tablespoon of white vinegar
1 tablespoon of extra virgin olive oil
1 tablespoon of fresh dill or dried dill
1/2 teaspoon of salt
Take your cucumber and cut it in half length wise, then cut it in half width wise. Take a spoon and scrape out all the seeds from the center and discard the seeds.
Grate the cucumber with a cheese grater. Take grated cucumber and place it into a fine mesh sieve or a cheese cloth.
Sprinkle the cucumber with 1/2 teaspoon of salt and allow to drain for 3 hours. After the 3 hours squeeze as much water out of the cucumber as possible.
In a bowl add all the ingredients and mix together, if it needs more salt add a bit more. You want the sauce to have a great zip to it, so adjust the vinegar, oil and salt to your tastes.
Cover and place in the fridge for 3 hours. This allows the flavors to get more intense and allows them to combine better.
Serve along side some souvlaki, pita bread or any other Greek food. You can even use it as a dip with veggies.
